Salmon Chowder

This easy and delicious Salmon Chowder will warm you on a cold fall day.

Ingredients

1 can of Harbor Bell Salmon, regular or smoked (do not drain) broken up with fork
2 Tbsp butter
1/2 cup chopped onion
1/2 cup chopped celery
2 tsp minced garlic
1 cup diced red potatoes
1 carrot, diced
1-1/2 cups chicken broth
3/4 cup corn, fresh, frozen or canned
2 cups half & half
1/4 tsp red pepper flakes
1/2 tsp thyme
1 cup cheddar cheese
Salt and Pepper to taste

Directions

Melt butter in 4 quart pot. Saute onion, celery, potatoes and carrots until
onion is transparent (about 5 minutes). Add garlic and cook another 2 minutes.
Add chicken broth and cook about 15 minutes, until potatoes are soft. Add
Harbor Bell Salmon, half and half, corn and spices. Simmer over low heat for 20 minutes
stirring occasionally. Add cheddar.
This chowder tastes best if you let it sit in the refrigerator for a couple of hours to
let the flavors blend and then reheat. Serve with a crusty french bread or roll.
