Seafood Spinach Frittata

This amazing frittata can be made with our delicious crab or salmon. Add a yummy green salad for a quick and nutritious meal!

Ingredients

1 can Tuna Guys Salmon or Tuna Guys Crab, drained
1 tablespoon olive oil
1/2 medium white onion, chopped
1 teaspoon chopped garlic
3 cups fresh spinach, (frozen may be used, drain well)
8 large eggs, beaten
1 green onion, chopped
1/4 cup sour cream
salt and pepper to taste
2 oz. cream cheese
2 tablespoons parmesan cheese

Directions

Preheat oven to 350 degrees
In an oven proof skillet, saute white onion and garlic
in olive oil until onions are soft. Add spinach and cook
one minute or until spinach is wilted. Add 1 teaspoon water if necessary.
In a large bowl, beat eggs, salt and pepper until foamy;
stir in sour cream and spinach. Fold in onions, seafood and green onions.
Pour egg mixture into skillet, stir to combine all ingredients.
Drop small pieces of cream cheese on top of egg mixture.
Bake for 30-35 minutes or until eggs are set.
Sprinkle parmesan
cheese over while hot. Allow to cool 5 minutes
before serving.
